2 cups flour
1 cup sugar
1 Tabl. plus 1 tsp. Baking powder
½ tsp. Salt
½ cup butter
1 cup canned pumpkin
1 cup evaporated milk
2 eggs, beaten
½ tsp. Ground cinnamon
½ tsp. Ground cloves
Our first Food Blogger of the Month of November is Debbi Horseman Powers. She informed me that these Golden Pumpkin Muffins have appeared on her table everything Thanksgiving for the last 36 years. I made her delicious recipe and I think this will be a new recipe I add to my Thanksgiving Day lineup! Your house will smell amazing while these muffins are baking.
Mix together flour, sugar, baking powder and salt. Cut in butter until mixture has a crumbly texture. In a separate bowl combine pumpkin, milk, eggs and spices; mix well. Gradually add dry mixture, beating until smooth. Using a small ice cream scoop to measure the batter, fill greased muffin tins or paper lined tins 2/3 full. Bake in preheated 375 oven for 20 minutes. Makes 12-15 muffins.*
*I baked mine for 19 minutes and yielded 18 muffins.
This recipe is from The Dinner Horn Country Inn that was located in Kansas City, Missouri. Unfortunately, the restaurant is no longer open for business. From what I understand, it was a great restaurant owned and operated by a family that actually lived upstairs over the restaurant.
